Simpson, home demonstration agent, this week urged Madison County homemakers to cook their potatoes to obtain the most food value. " Important food values lie close to the skin of the potatoes, " Mrs. Simpson said. " Boiling and baking potatoes in their jackets helps to save these food values. These important nutrients are lost in the refuse when potatoes are peeled before cooking. " Boiling potatoes in their skins helps to retain the outer layers of the potato for eating purposes, the home agent explained, When mealy potatoes are peeled and cooked, much of the potato cooks off into the cooking water. It saves time to boil potatoes in their skins, the Extension Service worker continued. Potatoes can be peeled more quickly after they have been cooked. " Potatoes sliced and left standing in water will lose considerable amounts of vitamins B and C, " the home agent declared. " Frying potatoes is detrimental to the vitamin C content and frying takes fat which is of limited supply. " Freshly dug potatoes have a high water content and spoil quickly if not kept cold after cooking, " Mrs. Simpson pointed out. " For this reason it is wise to cook only the amount of potatoes which can be consumed at one meal.
