(Low Ration points) Simmer a 2 1/2-lb. low ration point ham shank (with bone in) in 3 cups of hot water for 2 hours. Remove ham, force thru food chopper. To 2 cups ground ham, add 2 teaspoons horseradish and 2 teaspoons prepared mustard. Soften 1 tablespoon gelatin in 1/4 cup hot ham stock; dissolve in 2 cups hot ham stock; add 2 bouillon cubes. Combine with ham mixture; add 1 1/2 cups whole wheat flakes. Chill until firm in greased 8 in. by 4 in. loaf pan. Unmold and serve garnished with parsley or lettuce.
