She was born May 16, 1946 at Our Lady of the Lake Medical Center in Baton Rouge and raised up in Walker. She graduated from Walker High School and the University of Arkansas. She also attended LSU where the met her husband on Aug 20, 1966. While at LSU she was a member of the Delta Zeta Sorority. For many years Katie volunteered as Eucharist minister at Our Lady of the Lake Medical Center in Baton Rouge. Serving communion to the patients. She also served as a co-facilitator for home retreats at the Cenacle Retreat House in Metairie, and participated in the Marian Servants in St. George Parish and many other faith based activities. Mrs. Jackson enjoyed travel and study, and in the last few years she enjoyed iconology and painting. She also enjoyed the simple things in life like a beautiful sunset. She was also a daily participant at Mass at various churches in the vicinity, as well as a member and participant in many bible study groups and retreats. Katie is survived by her husband; four sons and two daughters-in-law; a brother and sister-in-law; her husband’s two sisters and their husbands; her husband’s brother and his wife; nieces and nephews; and three granddaughters and a grandson and one yet to be born. Her parents, Douglas F. Peak and Mary Rita Schivique Peak, preceded her in death. Visitation was at St. Joseph Cathedral with burial in Oak Lane Memorial Park, Prarieville.
