The cancer was short-lived and very aggressive, but Ellise put up a valiant fight and never lost her verve, attitude, or outlook. She was 50, born in Baton Rouge on Sept. 26, 1958. She grew up in Brusly and Port Allen, and lived many years in the Houston area, mostly in Galena Park and over the last several years in Montgomery, Texas. Ellise graduated from Port Allen High School and was a member of the National Honor Society. She attended LSU. For six years, she was a substitute teacher in the Galena Park Independent School District. Though a substitute, she worked almost daily in the school system and was proud of her opportunity to help the youth of the community. A devoted mother and wife, Ellise was interested in the arts and loved dance, art and music. She often worked as decorator and shopper, often crafting her own items such as draperies, curtains, and upholstery all the while enjoying the opportunity to bring beauty and order into people's homes. Additionally, she always found the time to befriend, mentor, and advise people in all walks of life. In recent years, Ellise was most happy spending time with her husband, in their boat, on Lake Conroe entertaining friends, guests, and family. She was preceded in death by her father, Henry S. Couvillon. Ellise is survived by her husband, Gary D. Knowls; son, Lorne Scott Couvillon Knowls; stepson and wife, Daniel and Christine Knowls, of Cleveland, Ohio; stepdaughter and husband, Deborah and Chris Clark, of Broken Arrow, Okla.; and three grandchildren, Trenton Clark, Wesley Clark and Cameron Knowls. She is also survived by her mother and stepfather, Virgieline and Sterling Acosta, of Hammond; stepmother, Betty Rathke Couvillon, of Marksville; a sister, Jeanne'ette Flowers, of Spring, Texas; and two stepsisters, Tina and husband Herman Lemoine, of Marksville, and Annette Shurtz, of Mandeville; three brothers and sisters-in-law, Col. (USMCR) David and Sharon Couvillon, of Brusly; Lt. (USNR) Michael and Wendy Couvillon, of Houma, and Edward and Cindy Couvillon, of Maywood, Neb.; five stepbrothers and sisters-in-law, Terry and Diane Rathcke, of Zachary, Mike and Tracey Rathcke, of Baton Rouge, Richard and Dottie Acosta, of Destrehan, Troy and Karen Acosta, of Frederick, Md.; and Mark and Janice Acosta, of Munce; as well as numerous nieces and nephews. Visitation at Forest Park The Woodlands Funeral Home, 18000 I-45S, Conroe, Texas, (936) 273-4922, on Monday evening, Feb. 16, from 5 p.m. to 9 p.m. Service in the funeral home chapel on Tuesday, Feb. 17, at 10 a.m., with interment immediately following at Forest Park The Woodlands Cemetery. Pallbearers will be nephew and godson, Garrett Couvillon; and family friends, Mark Himberger, John Ellisor, Richard Lee, Bob Fitch and Tom Tuckwell. Ellise asked that in lieu of flowers, donations be given to either the American Cancer Society or to The Cancer Treatment Centers of America-Tulsa.
