Georgia St. Mrs. Fields was born June 30, 1904, near Caro in Nacogdoches County, the eighth of 12 children of John William Seelbach and Lavinia Hamilton. When she had completed the classes offered at the local school, her father gave her a share of the cotton crop to help her attend the newly opened Stephen F. Austin College where she finished high school and earned enough college credits to begin teaching. For her first job, she rode a horse to Twilight, a one-teacher school about 12 miles from her family's home. A courageous woman, she left the security of the piney woods and came west in 1927 to teach, first for a year in the Alanreed School, then in Groom, where she taught first grade for the next six years. Her former students remembered her with great affection. She continued her education in the summers by attending Texas Normal College (North Texas State University) and Stephen F. Austin. On July 27, 1930, she married Madison Franklin Fields, a Carson County farmer with whom Minnie shared more than 52 years until his death in 1983. She encouraged him in many ways, including expansion of his farming and ranching interests into Armstrong and Deaf Smith counties. After his death, her talents as an astute and conscientious business woman were valued as she continued to manage the farms they had acquired together. During and after World War II, the family lived on a farm north of Groom, which was largely self-sustaining with its milk cows, poultry and beef and where Minnie won prizes for her canned peaches, tomatoes and other farm produce. The hard work of those years was relieved by an active social life: picnics and swimming at the Clarendon Country Club, needle club and book club meetings, and long summer afternoons shelling peas in the company of friends. She was a worthy matron of the Eastern Star and an active member of First Baptist Church. In 1950, the family moved to Amarillo where Minnie Fields was a charter member of the Les Temps Study Club and a member of P.E.O. Chapter CM. She was a charter member of the Town Club, a member of the Knife and Fork Club and of the Mary Sunday School Class at First Baptist Church.
